Ingredients
Bars:
-1/2 cup butter melted
-1/2 cup pumpkin puree
-1 cup dark brown sugar
-1 egg
-1/2 tsp baking soda
-1 tsp ground cinnamon
-1/2 tsp salt
-1 tsp vanilla extract
-1 ¼cups flour
-1/2 cup chopped Valley Grown Walnuts
-2 Tbsp sugar
-1/2 tsp cinnamon
Cream Cheese Icing:
-2 Tbsp cream cheese
-1 Tbsp heavy cream
-1 cup powdered sugar
-1 tsp vanilla exract
-pinch of salt

Preparation
Preheat oven to 350° degrees
Combine the butter, pumpkin, brown sugar, egg, and vanilla in a mixing bowl. Mix until combined.
In a seperate bowl combine your dry ingredients together, flour, baking soda, salt, cinnamon. Mix well.
Slowly add your flour mixture to your wet ingredients and mix until just combined.
Fold in your chopped walnuts with a spatula
Spread batter into a greased or lined 8x8 baking dish.
Mix your 2 Tbsp of sugar and 1/2 tsp cinnamon and sprinkle over top of the bars. Take a sharp knife and swirl the mixture around on the top of the bars.
Bake for 25-30 mniutes, until toothpick comes out clean, don't overbake.
Once bars are in the oven, start on your cream cheese icing.
Combine cream cheese powdered sugar, salt, cream, and vanilla in a saucepan on low heat. Whisk constantly until everything begins to melt and combine.
Once the icing is combined, remove from stove and let cool until bars are out of the oven.
Drizzle icing on bars after bars cool for about 20 minutes, or immediately after. Depending on how hot your bars are the icing will either melt over top like a glaze or you can let the bars set and make a nice drizzle.
