Ingredients
Pund Cake:
1 cup butter, softened
-1 cup sugar
-1/2 cup brown sugar
-4 large eggs
1 tbsp vanilla extract
-2 1/2 cups all-purpose flour
-2 tsp baking powder
-1 cup whole milk
-1/4 tsp salt
-3/4 cup walnuts, ground
Streusel:
-1 cup walnuts, chopped
-1/2 cup brown sugar
-3 tbsp flour
-3 tbsp butter melted
-1 tsp ground cinnamon
Preparation
Directions for Pound Cake:
Preheat oven to 350°F and spray a bundt pan generously with non-stick spray.
Cream together the butter, sugar, brown sugar on medium until light and fluffy.
Add in one egg at a time just until combined.
Add in vanilla extract.
In a medium bowl whisk together your flour, baking powder, and salt. Alternate adding milk and the flour mixture into your batter until combined.
Grind your 3/4 cup walnuts in a food processor or high emulsion blender until they come to a soft ground texture.
Fold in your ground walnuts until combined. Set aside and start on the streusel.
Directions for Streusel:
Mix together all your ingredients for the streusel with a fork until a crumble forms.
Pour the streusel on the bottom of the bundt pan, if you are worried about it sticking, wait and pour the streusel on top of your batter before baking.
Pour the batter into the greased bundt pan and then sprinkle your streusel on top.
Bake for 50-60 minutes, until a toothpick comes out clean. Time will vary depending on bundt pan and oven.
Let the pound cake cool for 15-20 minutes before removing from pan. Invert the cake onto a large platter. If your streusel is on the bottom of the cake invert the cake one more time to have the streusel on top. Let cool. and enjoy!
