Ingredients
-5 tbsps salted butter
-1/3 cup honey
-1/2 cup brown sugar
-1 tsp vanilla extract
-1/4 cup Valley Grown Salted or All Natural Walnut Butter
-2 cups old-fashioned oats
-1 cup crispy rice cereal
-1/4 cup unsweetened coconut flakes
-1/4 cup semi-sweet mini chocolate chips
-1/2 cup chopped walnuts
-1/4 cup whole wheat flour
-1/2 tsp salt (if using unsalted walnut butter)
Preparation
-Preheat oven to 325° F. Line a 9-inch square baking dish with parchment paper.
-In a small saucepan, melt your butter, honey, brown sugar, and walnut butter just until smooth, and then add in your vanilla extract.
-Let this cool for 10-15 minutes, before mixing with dry ingredients so you don't melt your chocolate chips while mixing.
-While sauce is cooling, mix together all your dry ingredients in a bowl.
Note: If your sauce still seems to be too warm, add your chocolate chips at the very end.
-Slowly add your wet ingredients to your dry ingredients, and mix until combined. It will be sticky!
-Pour your mixture into your prepared baking dish.
-Bake for 30-35 minutes until the edges of the bars start to turn brown.
-Remove from oven and let your bars cool completely before cutting into bars or squares.
-Store the bars in an airtight container for up to a week or you can freeze the bars to make them last longer!
