About the Recipe

Ingredients

-3 cups Old-Fashioned Rolled Oats

-1/4 cup coconut oil

-1/4 cup maple syrup

-1/2 cup pumpkin puree

-1/2 cup unsweetened coconut flakes or chips

-1/2 cup chopped walnuts

-1/4 cup pumpkin seeds

-2 teaspoons pumpkin pie spice (powder or liquid

-pinch of salt

-1/4 cup brown sugar (optional for a sweeter granola)


Preparation

  1. Preheat your oven to 325°F and line a cookie sheet with parchment paper.

  2. Add coconut oil and maple syrup to a microwave safe bowl (add 1/4 cup brown sugar if going for a sweeter granola) and heat on high for 30-45 seconds. Mix together.

  3. Add all the rest of your ingredients to a large mixing bowl and pour in your oil and maple syrup mixture. Mix together with a spatula until fully combined.

  4. Pour your granola mixture onto your prepared cookie tray and spread evenly on the pan.

  5. Bake for 35-45 minutes, until a golden brown.

  6. Let cool and store in a sealed container for up to two weeks on the counter or in the fridge.

  7. Enjoy on yogurt, oatmeal, or just as a snack!
