Ingredients

Pumpkin Loaf:

-1 cup pumpkin puree

-1/2 cup melted salted butter

-1/2 cup pure maple syrup

-2 large eggs

-2 teaspoons vanilla bean paste (or 2 tsp vanilla extract)

-1 1/2 cups all-purpose flour+2 tbsp

-2 tsps. baking powder

-1/2 tsp baking soda

-1 tsp ground cinnamon

-1/4 tsp ground nutmeg

-1/2 tsp salt

-1/2 cup semi-sweet chocolate chips

-1/3 cup chopped Valley Grown Walnuts


Cinnamon Sugar Swirl:

-1/2 cup granulated sugar

-1 tbsp ground cinnamon


Preparation

  1. Preheat oven to 350°F and spray a 9x5 loaf pan with non-stick spray.

  2. In a large mixing bowl, combine your pumpkin, melted butter, eggs, vanilla, and maple syrup. Add in your flour, baking soda and powder, cinnamon. nutmeg, and salt. Mix until combined. Fold in the chocolate chips and walnuts.

  3. In a small bowl mix together the 1/2 cup sugar and 1 tbsp cinnamon. Set aside.

  4. Pour half the pumpkin batter into your loaf pan and spread evenly in the bottom of the pan. Pour 1/2 of the cinnamon swirl mixture over the batter evenly. Add the rest of the pumpkin batter on top and spread evenly again. Pour over the second half of your cinnamon swirl mixture on top. Take a knife down the center of the loaf 1-2 times gently swirling the sugar. Careful to not over swirl.

  5. Place in your oven for about 30 minutes. Remove from oven and place tin foil on top to prevent any burning, and place back in the oven for another 20 minutes, or until a toothpick comes out clean.

  6. Remove from oven and let it slightly cool before serving warm with butter and ENJOY!
